Domaine F. Bachelier is a very small estate set among the gently sloping hills near Ma- ligny, which lies in the center of the Chablis vineyards. Here, the Savary and Bachelier family makes traditional, un-oaked Chablis that aptly reflects the classic style of the Chablis appellation and the chalky terroir of Maligny. This means a bright, shimmer- ing green-gold wine that embodies an ethe- real fragrance, a mouthful of racy, flinty flavors, and a very crisp finish.
Vinification and Elevage: Upon harvesting, grapes are gently pressed and allowed to settle. Fermentation and aging takes place in stainless steel, with a minimal use of oak for the 1er Crus (10-25%). The wines are bottled in the late spring after the vintage in order to present the greatest amount of freshness.
About The Vineyard: “Vaillons 1er Cru” is one of the older recognized Crus in Chablis totaling 15ha (of Les Vaillons) but nearly 120 ha total. Lovely and classic wines come from this site with both vivacity and power.
Tasting Notes: Lime blossom, verbena, citrus and cream. Green apple and hazelnuts round out the picture. Flint mineral and fresh acidity.
